Weight Watcher Recipe
Beef Stroganoff

Ingredients:
Whole wheat pasta-found in most grocery stores now
3 tablespoon olive oil
1 pound lean beef strips-I prefer to buy a sirloin steak and cut into strips
1 teaspoon crushed garlic- I buy the jars of crushed garlic to make it simple
½ cup finely diced onion
3 ounces mushrooms, sliced- about 6cups
1 shot glass of brandy
1 tablespoon Dijon mustard
1/2 teaspoon dried thyme leaves
1/2 cup light sour cream
1/4 cup parsley leaves -fresh, finely chopped
Directions: serves 4
Boil pasta- remember one serving of pasta is about the size of your palm or ¼ cup
Heat 1 tablespoon of olive oil in a nonstick skillet over medium high heat.
Saute beef strips quickly, in batches if necessary, until meat is well browned. Remove from pan and set aside.
Add 1 or 2 tablespoons of olive oil to skillet and saute garlic, onion and mushrooms 3-5 minutes or until onion is transparent. Add brandy, mustard and saute 2-3 minutes. Return meat to pan. Add pasta. Remove from heat and stir in sour cream.
Reheat if necessary, but do not boil. Season with salt and pepper to taste and garnish with parsley.
