WEIGHT WATCHER RECIPE- CHICKEN ENCHILADA'S
Ingredients:
- Skinless, boneless chicken breasts or I like using a rotisserie chicken for time savings
- Fat free sour cream
- Diced tomatoes- for topping
- 2 (4 oz) cans diced green chili peppers, drained
- Canned green or red enchilada sauce
- Whole wheat flour tortillas
- Low fat or fat free cheese
- Chopped tomato or salsa (optional)
- Thinly sliced green onion (optional)
- Crushed red pepper spice
Directions:
- Cook chicken in skillet or use the
rotisserie chicken.
- Break chicken up into small pieces or place in blender or food processor.
- Combine green chili peppers, chicken, crushed red pepper (to taste) and enough green or red enchilada sauce to make chicken mixture stick together.
Now dip one tortilla at a time in the enchilada sauce, place in a baking dish, and add the chicken mixture and a small amount of cheese.
Roll up tortilla. Once tortilla’s are placed in baking dish, pour enchilada sauce over dish to coat the enchilada’s. Sprinkle cheese over enchilada’s.
Bake, uncovered, in a 350 degree oven about 15-20 minutes or until heated through.
To serve, garnish with chopped tomato or sour cream.
