Miami Chicken Salad

Grilled chicken on a bed of spinach, vegetables, and fruit, topped with a balsamic vinaigrette
Serves: 4
Ingredients:
4 6oz boneless skinless chicken breasts
Season salt
1 bag of romaine lettuce
1 bag of lettuce blend (the darker green the healthier)
1 cucumber, sliced
2 tomato, diced
1 can mandarin oranges
1 can pineapple, pieces
Dressing:
4 tablespoons olive oil
6-8 tablespoons rice vinegar- I like the garlic blend
2 packets of splenda or sugar
2 tablespoons of red wine (optional)
Directions
Preheat grill to medium heat
Season chicken breasts, lightly coat with olive oil and grill until no longer pink.
While chicken is cooking, in a large bowl, combine lettuce, cucumber, tomato, oranges, and pineapple and toss.
Prepare the dressing by combining all ingredients and stirring well. Pour over salad and toss.
Place salad on plates, and slice each chicken breast and place on top or salad.
Enjoy!
